Curried Meatballs
serves 5-6

Meatballs

INGREDIENTS

2 pounds ground beef
1/2 cup bread crumbs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon granulated garlic
1 teaspoon ground ginger
2 eggs

DIRECTIONS

Preheat oven to 350º F. Mix all ingredients together and form meatballs in size you prefer. Place meatballs in a casserole dish. Bake covered for 25-35 minutes, depending on size of meatballs. Pour off excess oil and set aside.

Sauce

INGREDIENTS

4 Tablespoons butter
1 Granny Smith apple, medium chop
1 large onion, medium chop
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon turmeric
1 teaspoon curry powder
2 Tablespoons flour
2 cups beef stock, boiling hot
½ cup golden raisins
4 Tablespoons fruit chutney, any kind

DIRECTIONS

Heat a large pot and melt the butter. Add the apple and onion, sauté for 4 minutes. Add the garlic and all the spices to the apple/onions and cook an additional 3 minutes, stirring constantly. Add the flour, coat the veggies and cook 3 minutes.

Add the boiling stock to pot and whisk until sauce has smooth texture. Reduce heat to a simmer, add the meatballs and cook uncovered for 20-30 minutes. Add more stock, if necessary, to thin the sauce. Add raisins and chutney for last five minutes of cooking time. Serve with Basmati rice.
