Tuna Fish Salad 1

INGREDIENTS

3-6 ounce cans chunk tuna, packed in oil or water
4 hard boiled eggs, small chop
1/3 cup sweet pickle relish
1/3 cup bell pepper, small chop
1/2 to 3/4 cup mayonnaise, your choice of low, no or lots of fat

DIRECTIONS

Open cans of tuna and discard excess oil or water. Flake tuna with fork and combine completely with remaining ingredients. If you like your salad stiff, add less mayonnaise. If you like it a bit loose and soupy, add more mayonnaise. With this recipe you may add 4 ounces of cooked macaroni to stretch the salad. Serves 4-6

Salad 2

INGREDIENTS

2-6 ounce cans chunk tuna, packed in oil or water
8 ounces cream cheese, softened, your choice of low, no or lots of fat
3-4 Tablespoons fresh dill or chives, finely chopped
salt and pepper to taste

DIRECTIONS

Whip cream cheese with electric beater until soft and fluffy. Open cans of tuna and discard excess oil or water. Flake tuna. Combine tuna, cream cheese, fresh herbs and mix thoroughly. If salad is too stiff, add 1 Tablespoon mayonnaise. Serve on bed of lettuce with crackers. Serves 3-4
